Extra Virgin Olive Oil
has been produced and used in Italy for centuries, but has only recently achieved acceptance in this country.
Extra Virgin is made only of the finest olives selected, then picked by hand at exactly the right time.
The olives are then dried slightly in the sun, cold pressed by hand driven stone grinding wheels to insure that the pressure applied is not too great as the most flavorful oil lies just below the skin.
This first press is called Extra Virgin.
Subsequent pressings are called Virgin.
A touch of raw extra virgin oil on the finished product will never be forgotten.

Balsamic Vinegar
compliments the Extra Virgin Olive Oil.
This vinegar originates only in the Providence of Modena.
The process which produces it can take a century or more, and that is why this product is guaranteed by a Consortium Seal.
This slow passage of time with its seasonal temperature changes from barrel to barrel produces a finished vinegar with a strong personality.
This vinegar is never used during cooking, rather as a finish to foods before serving.
